Reblochon de Savoie made with raw milk by Fruitières Chabert, 450 g, master cheesemaker since 1936. Raw milk is the heart of the product here: it gives the reblochon its washed rind and hazelnut flavour, and it is also what requires the cheese to be kept chilled and offered with care to certain customer groups. The rind is coloured with annatto, a natural colouring of plant origin. This is an uncooked pressed-curd cheese from Savoie, quite unlike soft cheeses with a bloomy rind. Miamland lists cheeses for resellers, the hotel and catering trade, delicatessens and institutional caterers.
